Ingredients
  

Poppy Seed Dressing

  • ¾ cup white vinegar
  • cup sunflower oil or any light oil
  • ¾ cup sugar
  • 2 tbsp white onion I just eyeball a chunk of onion
  • tbsp salt
  • ¾ tsp dry mustard
  • tbsp poppy seeds

Broccoli Slaw

  • 1 head green cabbage small, shredded
  • 2 stalks broccoli chopped
  • 12 oz brussels sprouts chopped
  • 1/2 cup dried cranberries
  • 1/2 cup almonds sliced

Instructions
 

Poppy Seed Dressing

  • Place all ingredients except for the poppy seeds in a blender.
  • Blend on high for at least 1 minute, or until the onion is fully chopped up and emulsified into the dressing.
  • Add the poppy seeds and pulse a few times until incorporated into the dressing.

Broccoli Slaw

  • Combine ingredients in a large bowl
  • Pour half of the dressing and toss well to coat evenly
  • Best served refrigerated overnight

Notes

An easy to make slaw that's great for potlucks or barbecues. There will be enough dressing to make another batch or to top a fresh strawberry spinach salad. Refrigerate overnight before serving for the best result. MMMMM...
