Press sauté on your IP and once heated, add onion with a bit of water. After a minute, add celery and carrots. Cook another minute or so, then add ginger, garlic and spices, adding a bit more water to de glaze the pot.
Next add the sweet potatoes, lentils, and vegetable broth.
Give it a good stir, put on the lid and set on manual for 10 minutes. Let it sit about 10 minutes before releasing.
Add the coconut milk and kale, stir, and serve after kale has wilted.
