Instant Pot Sweet Potato Soup

As the days get cooler, my go to meal is usually soup. This quick dinner fits the bill and is a recipe the whole family will love!

  • 1 pressure cooker


  • 1 onion medium yellow, small dice
  • 1 stock celery small dice
  • 1 carrot large, small dice, I used yellow
  • 1/4 tsp dried chili flakes
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tbsp ginger paste
  • 1 tbsp minced garlic
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 2 lbs sweet potatoes skin on large dice
  • 1/2 c brown lentils rinsed
  • 2 c vegetable broth
  • 13.5 oz full fat coconut milk canned
  • 2 c kale chopped stems removed


  • Press sauté on your IP and once heated, add onion with a bit of water. After a minute, add celery and carrots. Cook another minute or so, then add ginger, garlic and spices, adding a bit more water to de glaze the pot.
  • Next add the sweet potatoes, lentils, and vegetable broth.
  • Give it a good stir, put on the lid and set on manual for 10 minutes. Let it sit about 10 minutes before releasing.
  • Add the coconut milk and kale, stir, and serve after kale has wilted.
  • Enjoy!!
