Meal Prep Veggies

You roasted a bunch of veggies for your meal prep but still have some left in the middle of the week? Use them to make a soup or curry. To make it a hearty meal, simply add potatoes, quinoa, lentils, chickpeas or another of your favorite grains. If you have a pressure cooker this is a very quick meal.
