Spring Broccoli Slaw
Ingredients
Poppy Seed Dressing
- ¾ cup white vinegar
- 1½ cup sunflower oil or any light oil
- ¾ cup sugar
- 2 tbsp white onion I just eyeball a chunk of onion
- 1¼ tbsp salt
- ¾ tsp dry mustard
- 1½ tbsp poppy seeds
Broccoli Slaw
- 1 head green cabbage small, shredded
- 2 stalks broccoli chopped
- 12 oz brussels sprouts chopped
- 1/2 cup dried cranberries
- 1/2 cup almonds sliced
Instructions
Poppy Seed Dressing
- Place all ingredients except for the poppy seeds in a blender.
- Blend on high for at least 1 minute, or until the onion is fully chopped up and emulsified into the dressing.
- Add the poppy seeds and pulse a few times until incorporated into the dressing.
Broccoli Slaw
- Combine ingredients in a large bowl
- Pour half of the dressing and toss well to coat evenly
- Best served refrigerated overnight
Notes
An easy to make slaw that's great for potlucks or barbecues. There will be enough dressing to make another batch or to top a fresh strawberry spinach salad. Refrigerate overnight before serving for the best result. MMMMM...
