  • 8 oz rice noodles
  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp agave nectar or any other vegan sweetener
  • 1 tbsp grated ginger
  • 2 cloves garlic minced
  • 1 red bell pepper sliced
  • 1 cup mushrooms sliced
  • 1 cup bok choy chopped
  • 1/4 cup cilantro chopped
  • 1/4 cup peanuts chopped
  • Lime wedges for serving



  • Cook the rice noodles according to package instructions. Drain and rinse with cold water.
  • In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, agave nectar, ginger, and garlic.
  • Heat a large skillet over medium-high heat. Add the red bell pepper, mushrooms, and bok choy, sauté for 2-3 minutes or until softened.
  • Stir in the peanut butter mixture and cook for 1-2 minutes or until heated through.
  • Add the cooked noodles to the skillet, toss everything together until well combined.
  • Garnish with cilantro and chopped peanuts.
  • Serve the noodles with lime wedges on the side.
