This Vegan Thai Peanut Noodles recipe is a delicious and healthy vegan dish that is perfect as a weeknight dinner. - 8 oz rice noodles
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp agave nectar or any other vegan sweetener
- 1 tbsp grated ginger
- 2 cloves garlic minced
- 1 red bell pepper sliced
- 1 cup mushrooms sliced
- 1 cup bok choy chopped
- 1/4 cup cilantro chopped
- 1/4 cup peanuts chopped
- Lime wedges for serving
- Cook the rice noodles according to package instructions. Drain and rinse with cold water.
- In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, agave nectar, ginger, and garlic.
- Heat a large skillet over medium-high heat. Add the red bell pepper, mushrooms, and bok choy, sauté for 2-3 minutes or until softened.
- Stir in the peanut butter mixture and cook for 1-2 minutes or until heated through.
- Add the cooked noodles to the skillet, toss everything together until well combined.
- Garnish with cilantro and chopped peanuts.
- Serve the noodles with lime wedges on the side.
