Jackfruit & Potato Taquitos

Looking for a meatless Monday recipe that's both satisfying and delicious? Look no further than these jackfruit and potato taquitos! These crispy, rolled-up taquitos are filled with a savory blend of jackfruit and potatoes, seasoned to perfection with spices like cumin, onion powder, chili powder, and garlic. Jackfruit is a tropical fruit with a meaty texture that makes it a great substitute for meat in vegetarian and vegan dishes, while the potatoes add a creamy, hearty element to the filling. Serve with your favorite dipping sauce for a tasty and satisfying meal that's perfect for any day of the week!
